Apple Pie Muffins

Yield: 6 muffins

Time: about 30 minutes total

This super easy gluten-free recipe takes no time and is perfect for an on-the-go breakfast or just to snack on. 

 

Ingredients:

1 cup Blanched Almond Flour

¼ tsp. Baking Soda

2 Eggs

½ tsp. Apple Cider Vinegar

1 tbsp. Raw Honey

1 Apple 

1 tbsp. Coconut Oil

1 tbsp. Coconut Sugar

2 tbsp. Water

½ tsp. Cinnamon

¼ tsp. Nutmeg

  • Preheat oven to 400 degrees F, and coat muffin tin with baking spray or muffin liners
  • Peel, dice, and sauté the apple with coconut oil over medium heat until soft
  • Add sugar, water, cinnamon, and nutmeg, let simmer for 3 minutes and remove from heat
  • In a large mixing bowl, whisk together eggs, vinegar, and honey, then mix in almond flour and baking soda.
  • Fold the sautéed apples into the batter, fill muffin tins, and bake at 400 for 15-17 minutes or until a toothpick inserted into the middle of a muffin comes out clean
  • Let muffins cool for 10 minutes (if you can resist yourself) and enjoy!
